Growing up, I was never really a big fan of burgers. My parents didn’t let us eat fast food often, so they weren’t something I thought about that much. Strangely enough, I didn’t really develop a love of burgers until I stopped eating meat. As much as I wasn’t a fan of regular burgers, I love a good veggie burger. We’re lucky to have three phenomenal burger places in Frederick, and each of them boasts a DELICIOUS veggie burger – so since moving here, my love of veggie burgers has grown exponentially.
I think what I’ve realized is that it’s all about the toppings – and more specifically, the sauce. To me, a good burger needs three key ingredients – cheese, pickles, and a yummy sauce. As long as it has those three things, it’s a winner in my book. And if there’s one thing that I love more than a good veggie burger, it’s a good bowl. Since I started working from home, bowls are my go-to lunch, and in the spirit of getting more creative, I decided to combine two of my favorite things to make these veggie burger bowls. Piping hot veggie burgers are topped with zesty pickles, juicy cherry tomatoes, and crunchy onions for a hearty and yummy lunch. This is one of my favorite lunches for when everything else feels boring and it seems like I have nothing in the pantry. Try it out and let me know what you think!
Veggie Burger Bowls with Special Burger Sauce

- For the Burger Bowls:
2 veggie burger patties
2 cups cooked brown rice
1 cup shredded lettuce or coleslaw mix
1/2 cup shredded sharp cheddar cheese
1/2 cup cherry tomatoes, quartered
1/4 cup pickles, chopped
1/4 cup thinly sliced white onion
- For the Special Burger Sauce:
2 TBSP mayonnaise
2 tsp ketchup
1/4 tsp mustard (any works, but I love the dill pickle mustard from TJ’s)
1 tsp water
Directions
- Heat a drizzle of olive oil in a pan over medium heat. Add veggie burgers of your choice (I like Cowboy Quinoa Burgers from Trader Joe’s or Impossible burgers) to the pan and cook according to package instructions.
- While the veggie burgers are cooking, make the special burger sauce by whisking together all ingredients in a small bowl.
- Once the sauce is complete, you can begin to compile the burger bowls. Start with a base of rice – add 1 cup to each bowl. Top each bowl with half of the cherry tomatoes, lettuce or coleslaw mix, pickles, white onion, and cheese.
- When veggie burgers are done cooking, chop each one up roughly using a spatula and add one to each bowl. Top with a drizzle of the special burger sauce and enjoy!
Notes
- If you want to kick the special burger sauce up a notch, add a teaspoon of very finely chopped pickles! It adds some zest and a nice crunch.
